Cinnamon Pickles

Day 1
1 gallon peeled and cut cucumbers. Peel cucumbers, cut in half lengthwise and scoop out seeds. Slice into 1/4 to 1/2 inch slices. Mix 2 cups lime and 81/2 quarts water, add sliced cucumbers and let stand 24 hours.

Day 2

Rinse cucumbers really well with cold water (in sink with colander).Mix together 1 cup vinegar, 1 small bottle red food color and 1 teaspoon Alum.Add cucumbers, cover with water and cook for 2 hours. Drain off and throw away water. Mix syrup of:

2 cups vinegar
2 cups water
10 cups sugar
8 cinnamon sticks
8oz. package of red hots

Boil syrup until red hots melt, pour over cucumbers and let stand overnight.

Day 3

Drain syrup into kettle and bring to boil. Pack cucumbers into jars and pour hot syrup over and seal.
